About

Having been born and raised in Izu, I have dedicated my career to Japanese cuisine, refining my craft over many years as an executive chef at hotels and traditional inns throughout the region.
Through close relationships with local producers, I have developed a deep appreciation for the seasonal ingredients that Izu has to offer, striving to express the unique character of each season in every dish.
With a desire to create a more intimate dining experience and to devote greater care to each plate I serve, I opened Mamezakura as an independent restaurant.
I hope you will enjoy a moment of relaxation and hospitality, accompanied by seasonal cuisine that reflects the beauty and spirit of Izu.

Our Philosophy

Ingredients
We believe that the finest flavors are found within the ingredients themselves.
At Mamezakura, we celebrate the seasonal bounty of Izu—surrounded by both sea and mountains—while also selecting exceptional ingredients from throughout Japan. Each course is crafted to express the changing seasons and the richness of nature.
With the utmost respect for every ingredient, we strive to enhance its natural character through careful preparation and a restrained approach, allowing its true flavor to speak for itself.

Tableware
In Japanese cuisine, tableware plays an essential role in expressing both the character of a dish and the beauty of the seasons. The same dish can take on an entirely different impression depending on the vessel in which it is served.
At Mamezakura, we carefully select each piece of tableware to complement our cuisine while reflecting the natural beauty and seasonal changes of Izu. Some pieces convey the warmth of the earth, others showcase the beauty of their glaze, while some are chosen for the sense of space and balance they create.
While the cuisine remains the centerpiece, the tableware quietly enhances the overall presentation, bringing harmony to each dish. We invite you to enjoy not only the flavors of our cuisine, but also the artistry and atmosphere created by the vessels that accompany it.

Sake & Beverages
To complement our cuisine, we offer a thoughtfully selected collection of beverages, including sake brewed from rice cultivated by the local community of Ike, along with exceptional sake, wine, and shochu from across Japan.
Each selection is chosen to harmonize with the flavors of the season, enhancing the character of every dish while adding depth to the dining experience.
We invite you to enjoy the pairing of food and drink, carefully matched to the menu of the day.
Seasonal Cuisine
At Mamezakura, we place great importance on seasonal ingredients at their peak, crafting each menu according to the finest selections available that day.
As the seasons change and the availability of ingredients varies with nature, the contents of our courses evolve from day to day. Each dish is carefully prepared to capture the unique flavors and character of the moment.
We invite you to discover the menu upon your arrival and enjoy the pleasures of the season through a dining experience that is never quite the same twice.
